On five (or more) different bits of paper (business cards are a solid choice), you jot down a unique sentence, folding each card as you go.
The participant takes all five cards, and while you turn your back (or step out for a cheeky pint), they open one and read it. Once they’ve done that, the Mentalist has a quick natter with the spectator and then tells them exactly what sentence they were thinking of. The papers stay firmly in the participant's hands the whole time.
